Klimaat is niet alleenzaligmakend.
Er zijn Californische wijnbouwers die overwegen om naar Canada of zelfs Alaska te gaan om wijn te maken. De smalle strook langs de kust zou voldoende kunnen opwarmen om een goed klimaat voor wijnbouw te bieden. De hoge vochtigheid langs de kust zou echter voor problemen kunnen zorgen. Bovendien wordt geen rekening gehouden met de “terroir,” of karakter van de bodem; zelfs indien het klimaat perfect wordt kan het zijn dat men nooit echte kwaliteitswijn zal kunnen produceren.

- Als de temperatuur omhoog gaat gaan de druiven sneller rijpen. Deze stijging verloopt progressief. Wanneer druiven te snel rijpen, produceren ze te veel suiker (en dus alcohol) en te weinig zuren.

Although wine grapes might not suffer major declines in yield, quality rather than quantity is the issue with this crop. Too hot, and grapes may ripen too quickly and produce flabby wines with too little acid and too much alcohol. Too cold, and a wine’s character will tend toward less desirable green flavours such as grass or bell pepper.
